cleaning out my cellar (that’s not a metaphor)

As sweet potatoes hang on to their September gloriousness and carrots stay cool in the refrigerator, I sit here grasping for creative ways to use up summer’s produce.

Ok, grasping is a stretch; it’s rather simple to whip up veggie recipes, especially if that recipe includes cheese or sour cream.

So I thought I would share a recipe I am trying today:

Slow Cooker Ranch Sweet Potatoes & Carrots

What you need:

  • 2 big potatoes, diced – {I am using sweet potatoes}
  • handful of carrots – about 2 full cups sliced and diced
  • 1/2 cup chopped onion
  • Mushrooms if you’d like. I need to use mine up so I am adding them in here.
  • 1 ranch packet
  • 1 cup sour cream
  • 1 can cream of chicken soup

First, chop chop chop! It’s a lot of chopping, so I am grateful for my laptop and a rerun of The Bachelor. Can you believe that Tierra girl?? She’s like, sooo not meshing with the house at all. Whatevs.

Oh, I see you are looking at my phone with green eyes. No need to be jealous that I can keep a phone alive for over five years. I will never give up on you phone, never. Thank you for not giving up on me when I dropped you in the sink, washer, food, etc. You have all the functions I will ever need, including the stored rap music you randomly play at inappropriate times. I thank the previous owner for adding those songs and then putting you up on eBay.

Anyway, after cutting up the sweet potatoes, onions, mushrooms, and carrots, mix the non-veggie ingredients in a bowl thoroughly, and then add the veggies and mix again until combined and unpleasant looking.

Once combined, bring out your beautiful, time-saving Pam-sprayed slow cooker and add in the goods.

Turn the knobby to low. Now you have four to five free hours of not worrying your pretty/handsome self one bit about supper or the fact that you’re trying again to make Meatless Tuesday a thing.

However, I do try and squeeze in some treadmill time to balance out what I am going to do to this meal later on.

About an hour before serving time, I quick added in some of last night’s whitetail, thanks to Country Man. This gives the meat an hour to soak in the mixture and reminds me Meatless Tuesday will never be a thing.

Now, it’s ready to eat! Finally!

Mmmm… so worth the wait.

  1. Gosh, this looks so good! I have celiac disease and could easily substitute the soup so it would be gluten-free. I’m definitely going to try this.

  3. Mmmmm… I dig sweet potatoes! During my many years abroad in various countries I sampled many good (really sweet) sweet potatoes. But here in the Netherlands I’ve only found tasteless ones so far. Carrots are sweet though. 🙂

    Looks like a great meal. Prepared with love (all that chopping, that is what people aim to cut out when they buy (horrible) precooked food – pity, eh?) It’s just a bit of mindfulness that we need, ideally daily (even if you watch TV in the meantime).
